Mounted Knights (1150-1320)

Hi. I have really enjoyed the Wargames Atlantic range since getting back into models the past year or so. I just got a box the mounted knights and the sculpts are amazing (SO much better than Empire horses from GW circa 1999; not surprisingly). Anyway, the sheer quantity of heads is fantastic though I have noticed that they seem to come with two shields per knight as well as hand weapon, spear, and jousting lance per knight. Which shield have y'all be using the large or small and how well do they model up?
