My Fellows, I can't let this post pass... "sans y mettre mon grain de sel" (without giving it my two cents).
Personnaly, I like to mix "spicy" or very tasty onions with milder varieties, such as the "oignon des Cévennes" (light pink one, very soft and juicy). Such a mix is a very good base on a home-made pizza or "quiche" (like the Alsatian flammenküche).
With good local products, it's much better, "mon adjudant"!
